THE BASICS OF SMOKING MEAT FOR BEGINNERS
HOW TO SMOKE MEAT IN YOUR WEBER OR KETTLE BARBEQUE

  1. SOAK THE REDGUM SAWDUST
    Soak the Sawdust in water. 500gm is a typical quality and the amount used in the example below.
  2. PLACE OVER HEAT
    Squeeze sawdust out water by hand and place into a foil or metal tray and place over the coals or heat beads
    (note: the coals are only on e one side (under the sawdust tray)
  3. COOK WITH IN-DIRECT HEAT
    Place the meat on the ‘other side’ and put the lid on. Resist looking and lifting the lid. For the portions in the example, it took 2- 2.5 hours. Remember, smoking meat is a slow way to cook but the flavours are amazing.
  4. CREATE “FINISHING OFF” SMOKE
    Experiment with placing wet sawdust on the grill over the coals towards the end of the cooking session – the smoke is more visible and fragrant and will give the meat a boost.
